Step away from the butter, flour, sugar, and the oven! Wow, I did a lot of baking over the past week. It was a lot of fun, but given the fact I probably ate 5 dozen cookies and a pound of English Toffee (let's not even discuss all the goodies my Brother gave me with my Christmas gifts) it is time to stop the madness. It's all about moderation and I certainly had none of that!
Tonight I made Jerk Turkey Burgers for dinner. I came across the recipe at Eating Well. These were probably the best turkey burgers I have ever made. Usually my turkey burgers are boring, but these were very moist and certainly had flavor...just check out all the ingredients. I used the fancy smancy new George Foreman grill I got for my birthday and these were a hit. Enjoy!
Jerk Turkey Burgers
1/3 cup couscous
1/2 cup water
2 teaspoons canola oil
1/2 cup chopped red bell pepper (1/2 medium)
2 cloves garlic, minced
1 teaspoon dried thyme
1 teaspoon curry powder
1/2 teaspoon ground cumin
1/2 teaspoon allspice
1/2 teaspoon ground ginger
1/2 teaspoon salt
1/4 teaspoon freshly ground pepper
1/4 teaspoon Spanish paprika
1/8 teaspoon cayenne pepper
12 ounces ground turkey
4 whole-wheat hamburger buns, split and toasted
4 slices tomato
4 lettuce leaves
1. Combine couscous and water in a small bowl; let stand for 20 to 30 minutes or until the couscous is tender and the water is absorbed.
2. Heat oil in a small nonstick skillet over low heat. Add bell pepper, garlic, thyme, curry powder, cumin, allspice, ginger, salt, pepper, paprika, and cayenne. Cook, stirring, until the bell pepper is soft (1 to 2 minutes) let cool.
3. Prepare grill or preheat the broiler.
4. Combine turkey, couscous, and the bell pepper mixture in a medium sized bowl. Mix thoroughly, but lightly. Shape into four 3/4 inch thick patties. Grill or broil the patties until browned and no longer pink inside, about 5 minutes per side. Place on buns and garnish with tomato slices and lettuce leaves.
P.S. Even though I have stepped away from the oven, just wanted to mention one other item I baked on Christmas Day. Check out this quick and easy coffee cake at Kraft Foods. It was a hit on Christmas morning! I used a low sugar yellow cake make. You know, trying to help out on the calories :) The crumbs on top did not brown well so I put the broiler on for a few minutes to brown them up.
