Magic Cookie Bars aka Seven to Nine Layer Bars


I realized the other day that I had made these bar cookies a few weeks ago, created a draft post, and then never ended up posting them. How rude! My inspiration for these came about when reading about them on Baking Bites. When I grabbed the condensed milk out of my pantry there was a recipe booklet attached. Little did I know that these were a trademark cookie for Eagle Brand condensed milk. Do I live in cave or something? My recipe below is a combination of Nicole's from Baking Bites, the Eagle Brand recipe and my tweaks. Hmmmm, does that now mean I created my own recipe? :) Mine ended up as a Nine Layer Bar! These are a very rich bar cookie and I would suggest cutting the cookies in half the size I did! I think next time I make them I will mix up the ingredients a little and reduce the amount of chocolate chips and add either some craisins or dried cherries. Lastly, as noted on Nicole's blog, using salted nuts would help balance the sweetness.

Magic Cookie Bars

Makes 2 to 3 dozen cookies

2 1/4 - 2 1/2 cups graham cracker crumbs
3/4 cup oats
Cinnamon (I think I used 2 1/2 teaspoons; maybe 3)
1/2 cup (1 stick) butter or margarine
1 14 oz can sweetened condensed milk
1 cups semisweet chocolate chips
1 cup white chocolate chips
1 cup chopped nuts (I had walnuts on hand)
1 1/2 cups of flaked coconut

Preheat over to 350 degrees

In small bowl, combine graham cracker crumbs, oats, and cinnamon and stir together. Add butter and mix well. Press the crumb mixture firmly on bottom of 13x9 inch baking pan.
















Pour condensed milk evenly over mixture. Layer evenly with remaining ingredients; press down firmly with fork. (Sorry about the shadow below!)































Bake 25 minutes or until lightly browned. Let cool and cut into bars or diamonds. Store leftovers covered at room temperature.

Yum! It's been a while since I've had one of these. I like the idea of dried cherries with it!

I love the addition of cinnamon and oats! I've never poured the condensed milk over the crust though. That's always the last thing I add... pouring it over all of the other layers.

I used to make a version of these all the time, but the addition of oats, cinnamon and for me, white chocolate chips (never made them with WCC) - sounds and looks incredible! I think it's high time I reached for those cans of sweetened condensed milk in the back of my cupboard! Beautifully done! A Dream Bar - piterally1
