This month I signed up to send a package to a soldier overseas. The past two months my packages stayed stateside and went to our soldiers who are in the hospital recovering. I was feeling really bad as I have been so swamped at work that I just did not have my regular time to bake and missed our shipping schedule. I emailed my Leader for this round and she said it was o.k. to send late. My plan was to make pumpkin muffins and oatmeal raisin cookies. As I was racing home from work I realized that was a little ambitious for a weeknight given the fact I would not even turn the oven on until 6:30 or so. I decided to use my coupons from
Immaculate Baking Company for the oatmeal raisins ones. Their refrigerated dough is all natural so thought I would give it a whirl. Of course the husband and I had to taste test a few out of the first batch out of the oven. We both gave them a thumbs up! For the pumpkin muffins I used
this recipe which is now one of my favorites. This morning I headed off to the post office with the cookies, muffins and some fillers for the box that included, gum, candy, chips, and mints. Though late, mission accomplished! I hope everything arrives in good shape.
